I hope you all had a relaxing long weekend. Adam and I both unexpectedly had off from work, so we went to a friend’s for a dinner party on Sunday, then took Daphne for an unsuccessful play-date with a pair of kitties. It was so nice to relax and unwind a bit, and learn about Teacup Piglets.
Start off with a batch of brownies. I like Betty Crocker’s Fudge Brownies mix, but you can also try this delicious mix from Martha Stewart. I coated my dish with cooking spray, then placed a piece of parchment paper along the bottom, followed by an additional light dose of cooking spray. Do NOT use wax paper as Martha recommends, this will melt in a metal pan and your brownies will be covered in wax. Parchment paper is the best choice. This way, you can easily pull the entire batch out of the pan to make these easier.
Once your brownies are cooked, the next step is to roll. I decided to just cut small bite-sized squares and roll the brownie onto itself, then roll each in a topping. You can pick just about anything, ground nuts, sprinkles, cinnamon, powdered sugar, etc.
I used a cocoa and sugar mixture, plain white sugar, and powdered sugar to start. I had hoped to try a Mayan chocolate mix with cocoa, cayenne pepper, sugar and cinnamon, but I read a recipe that said chili powder. I tried that and it did not taste right, and figured out I should have gotten cayenne pepper instead. I’ll try that next time.
These were fast and easy, and so delicious we ate the whole pan in about an hour without even realizing it. Definitely share these with others so you don’t eat them all by yourself.
